Pacha
Locally, there is a GF and vegan restaurant called Trilogy. It is located in La Jolla, California.
I have been eating there for years and a while back they started using a new GF bread.
Fast forward and it has grown. Welcome to Pacha.
Basically all the products are buckwheat and water. Certain styles have additional ingredients.
Everything is vegan, 100% plant based, made in a dedicated GF facility, dairy free and soy free.
They have a variety of GF Breads.
They have English Muffins and tortillas.
I have found that toasting it 2-3 times gets the bread crispy.
